Should I use RAW or JPEG?

Many (if not all?) DSLRs have the option to save images in RAW or JPEG format. But which is best? RAW format literally takes the raw data captured by the camera's sensor and stores it without any compression. In this sense it's like the negative you would get with a film camera, simply capturing all the information without processing it in any way.
